apple bluberry raisin compote


When i have lots of apples at home, i love making apple desserts.
sometimes i steam them, bake them, or make apple raisin cinammon jam.
this time, i made apple blueberry raisin compote.
for the first time, i skipped adding sugar altogether.
tossed in LOTS of dried blueberries and raisins, and was surprised at how sweet this was!

with 2 big apples
1/2 cup raisins and 1/2 cup dried blueberries
salt
lemon juice
cinammon powder

peel apples, cut into cubes, toss with a pinch of s
alt and 1 teaspoon lemon juice.
toss in dried fruit and a pinch of cinammon powder.
cover and microwave at 500W for 15 min, stirring 2 or 3 times halfway.
cool before storing in fridge.
This compote goes well with toast, pancakes or waffles and ice cream.
And... in tarts too!

filled a tiny souffle mould with the compote, topped with crumble dough & baked in the oven.
=) the lazy way to get the same effect is to just sprinkle crushed digestive biscuits over the jam and enjoy with ice cream.

And... i have got something to show!
WHITE sweet potato!
steamed and topped with butter for breakfast
this looks so like potatoes, but they taste exactly like the regular sweet potato. sweet and creamy.

Dinner tonight, unconsciously, was filled with vegetables.
which gave my jaws such an exercise =P

toasted beancurd skin pouches filled with simmered dried daikon & carrots
Dried daikon strips taste like turnip.
so i pan fried the vegetable strips in garlic and miso and simmered it for a while before filling the beancurd skins. yummy!
stir fried komatsuna with garlic and fish cake slices
chestnut takikomi rice with shimeji mushrooms & tiny dried anchovies

i cant help having a second serving of rice whenever we have takikomi rice, i am overeating these days!!!
