Its been a long long long long time since i made fried rice cos firstly, i dont like rice.
Secondly, the eggs in the rice irk me.
Well essentially, i dont like fried rice.
But since i have started eating brown rice, i find myself learning to really enjoy eating rice!
Brown rice, called genmai, which directly translates to wholerice has this subtle nutty flavour and a nice chewy texture which i really like, and is the reason why my rice consumption is increasing. =)
Todays fried rice was...
Edamame with sakura prawns and tofu.
TOFU??!!!!
Yes, no eggs used at all. It was tofu.
When i asked J to figure what i added in todays fried rice, he mentioned everything correctly except for when he said eggs.
And i said, nope, absolutely no eggs used today.
But it tastes like eggs!
a bit milder though.
This is how i did it,
Tofu 450g
Pumpkin flakes (a dried form of pumpkin) 1&half cup
2tsp miso
some salt & shoyu
Pan fry tofu, using a wooden ladle to break up the tofu into pieces till it looks like scrambled egg whites.
At this point, there will be water coming out of the tofu, pour pumpkin flakes all over. Doing this soaks up the water and helps the pumpkin flakes stick evenly onto the tofu.
Now you get something that really resents scrambled eggs.
Next add the miso, salt and shoyu to flavour the eggs.
I tossed the eggs into the fried rice lastly, like how you would add eggs to fried rice lastly.
Topped the fried rice with sesame seeds & nori.
I never had such a huge plate of fried rice in my life! (not kidding)
Edamame is in season now & i managed to get some very nice ones at the farmers mart today, along with very pretty tomatoes
chilled tomato salad with kirboshi daikon (dried daikon strips)
Tamagoyaki in Js bento was real though
Tuna tamagoyaki, wakame salad, okara salad, and rice topped with sunflower seeds & goqi berries
=) a happy rice lover now
